When it comes to eating, kids have their preferences. Some are more picky than others, but they all have particular foods that they love. Easy finger foods tend to hang out on the top of the list, and the healthier they are – the happier mom is. My toddler spends most of the day snacking on things like grapes, fruit leathers, and lately, chicken nuggets. I’ve been working on creating a recipe that mom can enjoy too, and these chicken nuggets were gone almost faster than they could cool (dad joined in on the party too)!

Sometimes, when introducing paleo foods to older kids, parents can be met with a little resistance – and this recipe is such a great compromise! Your kiddos can enjoy a classic favorite, while you sit back and enjoy the fact that they are getting some healthy ingredients into their growing bodies.

You Will Need:
- 1/3 cup olive oil
- 1 lb ground chicken
- 1 egg
- 1 cup cilantro, chopped
- 1/2 cup chopped green onions
- 1 cup almond meal/flour
- 1/2 cup tapioca starch
- 1 tsp red pepper flakes
- salt & pepper to taste
For the sauce
- 1/3 cup white wine vinegar
- 3 tbs honey
- 1 tsp red pepper flakes
- 2 garlic cloves, minced
- 1/3 cup coconut aminos

What to Do:
- Heat olive oil in pan over medium-high heat
- Combine cilantro, green onions, egg, ground chicken, and 1/2 cup almond flour in a large bowl
- In a smaller bowl, combine 1/2 cup almond flour and tapioca starch
- 1 tablespoon at a time, shape chicken mixture into nugget shapes and dredge in flour mixture
- Once oil is hot, begin adding nuggets and cook until done, flipping once (about 5-7 minutes on each side)
- As nuggets are cooking, combine all sauce ingredients in a small bowl
- Once nuggets are done, place on paper towel-lined plate until cooled
